Microgreens are vegetable seedlings harvested in the primary stage of growth (generally between 8 and 20 days of planting seeds) when they are at their juiciest and most nutritious. Microgreens deliver a concentrated dose of potassium, iron, zinc, magnesium and copper amongst others and are an effective antioxidant.
